Strawberry Goodness

Here are a few yummy Strawberry Recipes....


MY DAD'S BEST EVER STRAWBERRY ICE CREAM
Process Strawberries in Blender until it makes 5 cups of blended fruit....sweeten to taste ( used 1/2 cup sugar)
Pour blended strawberries into 5 qt. ice cream maker
Add 2 cans condensed milk (eagle brand) to freezer
Add 1 pt. whipping cream
Add 2 cups more sugar
Add milk to fill line.

Turn on freezer and let it mix and freeze (Dad's freezer takes about 40 minutes)



World's Easiest Strawberry Jam
This is a recipe that I modified from this website.  It turned out really good!

2 pounds hulled strawberries, cut in half
4 cups sugar
1/4 cup lemon juice
1t. raspberry instant jello (or strawberry....I just had raspberry so I used it :) you can also use pectin instead of jello)

In a wide bowl, crush strawberries in batches until you have 4 cups of mashed berry. I used a pastry cutter.  In a heavy bottomed stock pot, mix together the strawberries, sugar, lemon juice, and jello. Stir over low heat until the sugar is dissolved. Increase heat to high, and bring the mixture to a full rolling boil. Boil, stirring often, for about half an hour.  Transfer to hot sterile jars, leaving 1/4 to 1/2 inch head space, and seal. Process in a water bath. If the jam is going to be eaten right away, don't bother with processing, and just refrigerate. If you have a sanitize cycle on dishwasher you can use that in lew of the water bath.  Just leave jars in until ready to use so that they will stay hot.
To test jam to see if it is the right consistency put a plate into the freezer about 10 minutes before you are done cooking the jam.  After the plate has set in freezer for 10 minutes put 1 t. hot jam on plate and return to freezer for 1 minute.  Then take plate out and run finger through the dollop of jam.  If it runs back together before finger makes it through the jam it needs to cook longer.  If it doesn't it is ready to be canned and refrigerated or frozen.


Almost Homemade Super Simple Strawberry Shortcake

Strawberries
4pintsstrawberries, sliced
1/2cupsugar
1/2cupwater
Mix

Whipped Cream
2cupsheavy cream
1/4cupsugar
1teaspoonvanilla


The homemade whipped cream is so simple and the key!  It doesn't take long....and it is gooooood!
Just pour all the whipped cream ingredients in bowl and beat on high with mixer until desired cream consistency forms.  YUMMMMMM!

Biscuits
I guess real homemade biscuits would make it homemade....but I used store bought....and it was good!  Taste so much better then the yellow sponge cake.


 Assemble...and enjoy!
